On the first day of Spring in 2014, almost eight years to the day after opening the first Snooze location, Schlegel and his family packed their bags and moved to Italy. For a year-and-a-half, Schlegel learned all things pertaining to vineyard management—how to import wine into the United States, what to do when a surprise hail storm destroys around 40% of his harvest, and whether his dreams would even be worth all the trouble. At Attimo we care about where our food comes from and the stories behind it, so we threw a dinner to showcase the awesome local ingredients, purveyors and chefs here in Colorado! Thanks to thegrowhaus we were able to host friends for a night of food and wine featuring charcuterie by riverbearamericanmeats, salad fresh cut from thegrowhaus hydroponic Bibb lettuce, fresh pasta served with mushrooms from mile_high_fungi, succulent lamb osso buco from superiorfarms and a mouth watering cherry crostata made only hours after picking by chefkeegan. We also had our friend Justin Williams stop by to help introduce the wines which included Chateau Latour 2004 and the newest additions to Attimo’s wine list our Barolo and Barbaresco!
