Continuing on with our quest to know where our food comes from, we had a great visit to the 4 Madonne dairy in Modena, where they make Parmigiano Reggiano. As with most products that have been assigned a DOP, there are a number of very specific aspects of how the cheese is made, extending all the way back to where the cows live and where the food they are fed comes from (even the hay they are fed needs to be grown within the region). Before being released at up to 30 months of age, every one of the thousands of wheels of cheese needs to be inspected (including extensive tapping with a small hammer for soundness and air pockets) by an independent expert. Parmigiano-Reggiano, the "King of Cheeses"! Last month we toured a cheese factory that produces wheels of the famous Parma cheese and here’s a little taste of what the production looks like. In the end, each cheese wheel is tested by a “master grader” who taps the wheel with a mallet to identify undesirable cracks within the wheel. My first ripened cheese baby! This Camembert-style raw goat milk cheese was aging in the wine fridge wrapped in cheese paper the last couple weeks while I was away on my Vipassana course. It was supposed to be turned daily, but I think it was only turned the first few days and then forgotten. • Anyway, I cut into it on Day 36, and it’s amazing! I love it! The texture is that of chilled rich butter, and it’s sooo flavorful with a wonderful fruitiness. Not very goaty at all. I think a yeasty hard cider would be the perfect pairing—to cut into the high fat content and complement its fruity aroma. • Hopefully, not just beginner’s luck! 😀

Guess we need to raise the sink 😅 #farmlife #dairylife #cheesemaking #familyfarm our daughters are quite petite and were teenagers when they helped Scott build the dairy. But our son-in-law, Boden and Scott are quite a bit taller. So they have to get creative when washing dishes for hours a week at a low sink. Looks like another project to add to the to do list.

This is the last year for the terravitafest and we are happy to be participating in two portions of the festival. We were among one of the first to take part in the Sustainable Classroom when it was added to the lineup. This year, we will be one of the last to teach a class and it's a killer one. Alongside dianeflynt of foggyridgecider, Tom Cuoma of papa_shogun_raleigh, Jael Rattigun of frenchbroadchocolate and my Brother Maximilian Kast of broadbentselections we will talk about the The Five Tastes: Sweet, Sour, Salty, Bitter and Umami (& Kokumi) That evening we will also be serving up our chapelhillcreamery Hickory Grove Raclette at the Tribute Dinner for the late Karen Barker. She was a neighbor at the creamery and though we never met, I will always remember seeing her and husband walk the lane by the creamery windows with their dogs. Last I heard she was on a path to recovery and was out walking all the time. It was a shock to hear of her passing. I sadly was never able to eat at Magnolia Grill but love eating with my wife & children at her son's pizzeriamercatonc. Pretty sure all tickets are sold out.
