This is the meal I prepped for myself this week. It’s called Korean Inspired Beef. Although I love meat and am trying to cut down on calories, I will actually be putting the meat on a gluten-free tortilla shell, with the cucumbers, and add in some sour cream with a dill dip seasoning packet mixed in. This will just add a little bit more to the meal so that it keeps me satisfied for longer and jazzes the meal up, so to speak, so it’s not just flavored beef and raw cucumbers. Meal prepping post and recipe coming! In my last post I was working on taking my supplements for 21 days to make it a habit. I did slack off this week but I’m ready to add them back in and add in some nutritious meals to my diet and cut out sugary drinks. As I said before, these are baby steps but it’s the baby steps all added together that achieve the big goals. On a side note, once I start up exercise again, I will try and take videos of my workouts. I forgot to post this so I’m posting it now. I made this for myself for lunches during the week and it turned out to be really good! It was a recipe I got off of one of the apps that I use, mealprepproapp 🙌🏼 It’s super great if you’re just trying to eat healthier, if you’re following a specific diet (Keto, Paleo, etc.), or if you have food restrictions like I do. It gives you the recipes for breakfast, lunch, and dinner, how many days you will be eating those meals, and when you need to meal prep again. It’s so handy! This specific recipe was called Salmon with Coconut Rice and Pepper salsa. I just seasoned the salmon with salt and pepper and the rice was actually cauliflower rice mixed with lime juice, garlic, red onions, shredded coconut (unsweetened), coconut cream, and cilantro. The pepper salsa was my favorite part of the dish; it had cucumbers, bell peppers, jalapeños, and cilantro with a little bit of lime juice. Decided to grab a few protein snacks at Festival Foods to try that are gluten and dairy free. So, so, so good! I didn’t like the textures of the bars at first but, I realized that the textures are going to change without the gluten and is something I could get used to since the flavors were on point. Plus, the textures were a lot better than some other dairy and gluten free protein bars I’ve had. I would have to say though that the protein cookie was my favorite. Gluten-free chicken strips with dairy-free ranch dressing as dip for lunch today. It may not be SUPER healthy but it checks all the boxes for my dietary restrictions...which since I don’t have a working microwave at work that’s all I’m going to worry about. Sorry I haven’t posted in awhile. I’ve literally not known what to post or say because these past few weeks I’ve just quit everything - improving my diet and continuing to workout. So, even though I didn’t want to start all over again...now I am.😝🤦🏼‍♀️ all I can tell myself right now is that it’s a work in progress and that I’ll figure out how to make these things a habit. Today I did a 15 minute walk and a 12 minute home workout. I’ll be able to tell by tomorrow if this will be too much for my back but at least for today I exercised. I had my hemp protein shake with a Vega sports protein bar so, my breakfast was healthy. I also am taking a healthy frozen lunch with me to work today. So, I’ve lost a couple of pounds/some of my bloating but I have no idea how I did it. I have been super slacking on my diet and exercise...I’m not gonna lie. I’ve said I was going to exercise at the end of last week and I didn’t. I said I was going to exercise yesterday and I didn’t. The one thing that has gotten me to stick to my diet and exercise is making a schedule through my Reminders app but I can’t even get myself to take the time to make a schedule through there. I think the frustration from having to constantly back off and back off from the level of intensity of my workouts constantly really discouraged me and has led to this funk that I’m in now. But, since I have the day off today, I will be focusing on developing a schedule again for this week. I have all the time in the world today so, I have no room for excuses. I really want this fitness kick this time around to stick and eventually become habit and my lifestyle. Sorry I haven’t posted in awhile...been busy and quite honestly even more frustrated. I’ve been doing ok on my nutrition (it could use some improvements) but exercising has proven to be the most difficult due to me having a back injury. I did the very first level of this workout on Monday and later on in the day I was in a lot of pain...which means no Jillian Michaels workouts for me for awhile...which sucks because that’s what I used a lot of to get fit the first time around before my back injury...keywords: before my back injury. So, I’m going all the way back to my physical therapy exercises and using those for my workouts and progress even slower up to what I really want to be doing - weights, running, and HIIT workouts. To say the least, this has definitely been an off week for me but I’m working on getting back on track. #hardweek #frustrating #fuckbackinjuries #snailspace #motivationalfitness #motivationalnutrition

These three quotes have a lot of meaning for me right now. I wasn’t able to exercise Saturday, Sunday, or today because of my back hurting. I’m pretty sure I did too much exercise this past week which frustrates me since I did mostly walking. When my body becomes fatigued in exercise my transverse abdominis and back muscles deactivate and so I hyperextend my back, causing back pain. I’m working on my pelvic tilt while exercising and keeping those muscles activated but it’s annoying that I have to go even slower than I thought I would have to. But, in the words of these quotes, any forward progress is better than no progress. I’m still staying pretty consistent with my nutrition but I noticed, and it happens to most people, that my diet suffered during the weekend. The first week is over though and I know now where to improve and what things to watch out for...which is still progress. #slowprogress #babysteps #frustrated #needanewapproach #nutrition #eatinghealthy #betteringmyself #motivationalfitness #motivationalnutrition

Didn’t go for a weight session at the gym this morning since my back was bothering me but I did the next best thing and went on a 30 minute walk. I almost walked 2 miles; I was a 1/4 mile short of 2 miles 🙌🏼 I had my guacamole and pico de gallo eggs again this morning but I added some steak bits in with them to add more protein and fat. If any of you are wondering if I make my own guacamole and pico de gallo, no I don’t. I pick up the pre-made stuff at Festival Foods...which brings me to the point that I grabbed the wrong guacamole. I normally get the original guacamole but I mistakenly picked up the hot and spicy guacamole. Today I did better than yesterday. I woke up later since I didn’t have to go to work so I had a late breakfast. I had my protein shake and bar since I didn’t feel like making anything and skipped lunch since I was still full from my late breakfast. I didn’t exercise again today but I did have a softball game tonight so it kinda counts as exercise 😂 my parents wanted to go out to eat for supper so we went somewhere where I could eat something healthy. Soooo I have something to confess. I skipped breakfast this morning and so ended up super hungry by lunch...and grabbed the first two things I thought of: my dairy-free, gluten-free ice cream and my gluten-free pretzels. Needless to say, those aren’t the best food choices. So, lesson learned...don’t skip meals when you’re trying to be healthy or if you do and get super hungry like me have a better plan in mind. I’m gonna drink my #advocarespark and shake my food choices off and choose better next time. Also, I won’t be exercising today since I am extremely sore from my gym workout yesterday. I’m giving my body some rest and getting back on track tomorrow. Today has just been an off day.
